Tasting the area's local cuisine is one thing that makes your trip complete, and finding a place to eat authentically is typically the issue that international visitors encounter the most. Also, the food might not be as good as expected, or the staff might not have the same sense of hospitality that one would expect from a private chef.

• Mexican style scrambled eggs: Mexican pico de gallo sauce, served with tortillas and refried beans.
• Rancher style eggs: Served with bread or crispy tortilla and black beans.
• Benedict eggs (classic poached eggs): Croissant bread, ham and hollandaise sauce on top with grained hash browns.
• Machaca eggs: Scrambled eggs with dried shredded beef served with flour tortillas and beans.
• Omelette: Scrambled eggs with dried shredded beef served with flour tortillas and beans.
• Omelette fete: Any kind of omelette, plain cheese, veggies, ham, bacon, chorizo and served with potatoes and beans.
• Steak Breakfast: Fried eggs with Mexican-prepared steak and rancher sauce with potatoes or beans.

APPETIZERS

• Sea Food Fountain: Fresh shrimp, scallops, fish marinated in lime juice, served with home-made chips.
• Smoked Tuna Over Stuffed Avocado: Smoked tuna and fresh pineapple stuffed avocado.
• Scallops Bourgignone: Fresh Scallops bake in a little shoot with bourgignone butter and bread.
• Mahi Mahi Ceviche: Fresh Mahi Mahi marinated in lime juice and pico sauce, served with home-made chips.
• Cheese Board:  Imported cheeses with assorted crackers basket.
• Coconut Shrimp: Fresh Mahi Mahi marinated in lime juice and pico sauce, served with home-made chips.
• Quesadillas: Authentic Mexican appetizer – Flour tortilla stuffed with mushrooms or chicken and cheese au gratin, pico sauce and guacamole.

SOUPS

• Sea Food Soup: Fresh fish, shrimp, scallops and crab in tomato base.
• Tortilla Soup: Guajillo pepper and tomato base with crispy tortillas, cheese and cream Lobster Bisque: Bisque de hormad – Authentic French lobster crème soup.
• Cream of Cheese: Crème soup, cooked with Poblano pepper strips and corn grains.

SALADS

• Caesar Salad: Original artisan dressing prepared in the moment, served in romaine with crouton and Parmesan cheese.
• Mix Greens Salad:  Mix greens with Feta cheese and basil dressing.
• Caprese Salad: Fresh mozzarella, tomato and basil on balsamic and olive oil.
• Greek Salad: Greens, Feta cheese, black olives, tomato and onions with balsamic vinaigrette.

MEXICAN DISHES

• Mexican Combo: Chile relleno – Poblano pepper stuffed with cheese au gratin on tomato sauce, chicken green.
• Enchilada and pork chimichanga: Served with beans and rice.
• Tenderloin Tampiquena: Grilled tenderloin served with chicken red enchilada, served with cheese quesadilla, guacamole, beans and rice.
• Sea Bass Veracruz: Fresh fish made with garlic, olive oil, tomato, capers, shallots, basil, thyme and white wine.
• Shrimp Tequila or Diablo: Jumbo shrimp sautéed in garlic olive oil, flambee au tequila, served with rice, grilled veggies, your choice or spicy or mild.

MEAT DISHES

• Chateaubriand au cognac: Beef tenderloin flambee au cognac with bleu cheese mashed potatoes, served with grilled veggies and gravy sauce.
• Rack of Lamb: Grilled New Zealand lamb marinated in garlic, rosemary and balsamic vinegar, served with potato pearls, grilled veggies and fresh mint sauce.
• New York Steak: Grilled New York steak, served with baked potatoe OR grilled veggies.
• Pork Loin Stuffed: Pork Loin stuffed with mushrooms and bacon, served with potatoes au gratin, veggies and apple gravy.

SEAFOOD PLATES

• Lobster Steamed in White Wine: Whole lobster steamed with white wine and butter, served with rice and veggies.
• Sea Bass in Garlic: Catch-of-the-Day sea bass prepared with garlic, olive oil and white wine, served with rice and grilled veggies.
• Thon Grille – Fresh Tuna: Fresh tuna marinated in fresh ginger, soy sauce and garlic; grilled and served with rice and veggies.
• Jumbo Shrimp Grillee: Jumbo shrimp grilled and topped with Menier sauce, served with rice and veggies.

• Scaloppine di Vitello al Marsala: Veal in Marsala sauce, served with linguini agli e olio (garlic and olive oil).
• Home-Made Ravioli: Made in-the-moment ravioli –Stuffed with spinach and ricotta cheese in tomato alfredo sauce.
• Lasagna al Forno: Original Italian dish – Stuffed with ground meat.
• Chicken Parmesana: Made with parsley and garlic, served with the pasta you prefer.
• Surf and Turf: Filet Mignon and Lobster, served with side dish of your choice.
• Chicken au Grill: Marinated chicken in fine herbs, served with side dish or your choice.
